Overview
At its best — from the ancient volcanic Classico zone around the medieval castle — Soave is one of Italy's most elegant whites: almond, white peach, mineral, with a distinctive bitter-almond finish. Unfortunately Soave's reputation was damaged by industrial production; the Classico DOC is now reclaiming its heritage.
